Same as alot of you it seems, I've never played ultimate frisbee but people I know that HAVE absolutely adore it. I think it sounds like a ton of good-natured outdoor sporty fun :) I'm all for it!
Tell us about yourself, what you do, which sports you play?

I haven't played a team sport since HS gym class. I am singularly active and excited to start a team sport.

Which Day & Time slots suits you? (eg Tuesday 7pm / Sat 3 pm)

These sound pretty good but I'd probably select Wednesday at 7 instead. That would work better for me.

Do you know of any place / beach / ground where we can play?

Not really, but I can ask around I suppose. Any pre-reqs that equals a good playing space?
